Fats, Oils and Grease (F.O.G.)


 

Fats, oil and grease, collectively known as FOG, are found in most residential and commercial kitchens. The discharge of FOG by the generator to sanitary sewer systems is a problem because the FOG can accumulate in the sewer and cause a backup or overflow.

 

 

You are a generator if you own or manage a:

  • Restaurant
  • Car Wash
  • Lube Station
  • Laundromat or dry cleaner
  • Establishment with interceptor (grease trap, lint trap, oil/water separator, lift station, grit trap)

 

If this happens, there could be severe consequences that include:

  • Public health endangerment
  • Damage to your home or business
  • Damage to the sanitary sewer system
  • Fines or citations

 

Generator Responsibilities

Section 86-23 (3)(b) of the City of Wharton Code of Ordinances states that every grease trap or interceptor must be completely evacuated a maximum of every 90 days (or more frequent to meet the 25% rule).

 

Section 86-23 (4)(e) manifest from each generator will be submitted to the City. The generator will be subject to enforcement action including fines, penalties for late submittal of the manifest.

 

Before your trap is cleaned, you must

  • Inspect and verify the trap is clean and completely empty before you sign the manifest
  • Make sure the correct capacity of the trap is noted on the manifest
  • Sign the "generator" portion of the manifest
  • Retain the Generator copy of the manifest from your transporter
  • Return Generator copy of manifest within 15 days of pump-out from the transporter
  • Retain manifest on file for a minimum of 3 years.

 

Note: The  facility will be required to have record of manifest onsite by next inspection so please coordinate with your staff so that records are available to inspector.

 

What to expect during your inspection

All establishments with grease/lint/sand/grit traps or interceptors will be inspected by Triple C Services (a company hired by City of Wharton) on a routine basis or if a complaint is reported. There will be no notification for inspections. 

 

During an inspection, the inspector (Triple C Services) will need to be provided the following documents: A recent manifest (yellow or white copy of waste manifest)

 

Inspectors will check your trap or interceptor. Your dumpster, rendering oil bin, and surrounding area will also be checked for proper maintenance and upkeep. Upon completion, a copy of the inspection form will be given to you for your records.
